It'll be a while before I can afford to make the leap to a PS4/XBone/WiiU, so I need suggestions to fill out my last gen consoles. I don't play as often as I once did, so I don't have too many recent titles and am still on years old games.
Just about wrapped up New Vegas and a bit into Arkham City. I have Skyrim which I still need to play, and have beaten GTA V.
Tell me what games to get, so I can add them to my collection and not play them, too.

Honestly, My favorite game of last gen was Borderlands 2. You might like that a lot, coming from New Vegas.
There's also Diablo III: Reaper of Souls.

I haven't decided whether to get Diablo for console or PC.

I've played part of the first two Borderlands but couldn't get into them. Possibly because I only played single player. May have to give em another try.

I have all 3 last gen. The Uncharted series is on my list. Also the Mass Effect series. Was thinking about Gears of War. Not sure how it holds up as single player.

You haven't played mass effect or uncharted? Holy crap start there. GOW is okay. Single player is good but not on the level of the other two.

Should I not mention that I haven't played any of the Bioshocks either?

Holy Crap! Go on a Bioshock spree! The Ken Levine era of Bioshock is awesome.
If you're strapped for time the second one was probably the worst of the three but still enjoyable. EDIT: Mass Effect is also a good series, but really hard to get into now. The first game feels VERY dated. 2 and 3 aren't so bad though.

Bioshock 2 was okay. It was good when I played it but when stacked against the rest of those games I would say skip it. I haven't played ME1 in years but even if it's dated ( which It probably is) it's essential to the experience.

I was going to replay the series before all these fall games came out, but when I went back to play ME1 I couldn't take anything seriously. That is a serious case of the graphics not standing up to what they should be.

The rumors of a hd collection on the new systems would be nice in this case

Dated graphics don't usually bug me. I'm more of substance over style kind of guy.

Then my suggestion is mass effect first.
