My wife doesn't really like comics either, but she ate up Essex County, The Underwater Welder, and Sweet Tooth, all by Jeff Lemire. If she likes Rom-Coms, maybe Grim Leaper? It does have rather graphic violence, but it's a charming story. Peter Panzerfaust is a WW2 re-imagining of Peter Pan, which she may like as well. Daytripper by Gabriel Ba and Fabio Moon is an emotional, not too sci-fi tale (kinda time-travely but not really) Oh but just FYI, Sweet Tooth does have strong language and violence

If she likes reading regular novels, perhaps there is a comic adaptation of something she has read and enjoyed? My wife also doesn't exactly read comics but she loves the Marvel adaptation of Stephen King's The Dark Tower series and she recently picked up some manga based on Les Miserables and Pride & Prejudice. You'd be surprised how many adaptations exist in the world of comics. Not just from books, but from TV shows and movies too. Maybe she would enjoy something a little more familiar to start, so why not look into a comic book adaptation of something you already know she enjoys?
Other than that, I would recommend Brian Azzarello and Cliff Chiang's Wonder Woman. I know it gets a lot of flack for not being "real Wonder Woman" but your wife doesn't read comics so she won't have any preconceived notions going into it. It's outside of continuity so you don't have to worry about having to explain other events and it has interesting takes on the Greek Gods. On top of all that, it's going to be ending soon so your wife will be able to read something that has a beginning and a finite end, which is a big plus for someone that reads regular novels, believe me. Part of the reason my wife doesn't take to comics is that they are either constantly interrupted or have no end, and Wonder Woman is the perfect fit for this.

One more recommendation! This is "La Perdida" written and drawn by Jessica Abel. It's about a 20-something Mexican-American woman traveling to Mexico City and focuses on her different relationships with other ex-pats and native Mexicans. I think her line-work is really beautiful, and it's a pretty powerful coming-of-age story about where to put your trust, how to decide who really cares about you, and having lived in Mexico myself for a while, I think it really captures the overwhelming feeling of being a foreigner in such a huge city. My only advice is: Don't try. It's such a pitfall ... for every time it works, there are ten times when it becomes a mess of resentment, hurt feelings, and epic contempt.
The best thing you could do is just enjoy what you do, leave her be ... and wait, the moment might come when SHE sparks an interest and then ... then it will be her decision, not yours.
